Do you know how easy it is to make your own jam?!
Ridiculously easy.
Like, so easy you could do it while on the phone, organizing your fridge, and watching The Nightmare Before Christmas, kind of easy. (Not that I recommend it)
The truth is, a lot of store-bought jam has way too much excess sugar. And who needs all those processed, brain-numbing, mood-killing calories anyway?
Making your own at home, not only helps to control your sugar intake, but also gives you creative license to play with flavor combinations and utilize whatever’s in season and/ or laying around your kitchen. And there is something very calming and centering about spending time in the kitchen making simple and wholesome foods.
After the jam was made, I put together a standard raw “crust” and allowed them to set in the freezer. Viola! Simple, tiny whole food pie bites. They’re gooey, slightly sweet and the cinnamon gives them a little holiday vibe.
Jam Layer:
3 Apples
1 Cup Raspberries ( I used frozen)
1/4 Cup Sugar
Pinch of Cinnamon
Pinch of Hemp Seeds
1/2 Cup Water
-Add all ingredients to a medium saucepan. Bring to a boil and reduce to simmer for about 10-20 minutes (depending on how thick youd like the jam). Hint: Less time is more of a compote consistency, more time is more of a jam consistency. Remove from heat and set aside.
Crust Layer:
15 Dates (pitted)
1 Cup Old Fashioned Rolled Oats
1 Tbsp Coconut Oil
1 Tsp Vanilla
Pinch of Salt.
-Pulse all ingredients together in food processor, until grainy texture appears. Line a pan with parchment paper and press firmly and evenly into the bottom. Top with jam and put place in freezer to firm up for about an hour. Cut into squares and serve.
