Simple Wholesome Brownies



There's no doubt that brownies are comfort food. There's just something about spending a rainy day at home baking little chocolaty squares of heaven in the kitchen that just feels right.


Whats often doesn't feel so right is reading the ingredient list of most store-bought brownie mixes. The hydrogenated oils, refined sugar and processed dairy can really do a number on the metabolism, making you feel sludgy, slow, tired and off-track.


These brownies are comfort food that you can genuinely feel good about. The gluten free flour won't bring your digestion to a standstill, you'll pack in a few extra nutrients with the coconut sugar and the pumpkin will give you a little immunity boost and keep your skin looking dewy and bright.


BUT honestly, these brownies are just plain good! Somewhere between cake and fudge. The perfect balance of gooey and chewy. They are good warm, and even better cold.


 

Simple Wholesome Brownies


1 Cup Gluten Free Flour

1/2 Cup Cocoa Powder

3/4 Cup Coconut Sugar

1/2 Tsp Salt

1/2 Tsp Vanilla Extract

1 15 Oz Can Pumpkin Puree

1/4 cup Vegan Chocolate Chips (optional but yummy)


Preheat the oven to 325 degrees. In a large bowl, mix together the flour, cocoa powder, coconut sugar and salt. Once blended mix in vanilla extract and pumpkin puree (and chocolate chips if you're using them) then set aside.


Lightly grease a 9 X 13 baking dish and pour brownie mixture, spreading it evenly in the dish. Bake brownies in oven for about 35-40 minutes. Remove from oven and let cool.


Cut and eat as is or top with melted chocolate, maldon sea salt flakes, fresh fruit, coconut whipped cream, THE WORLD IS YOUR OYSTER baby.
